Welcome to the Essential Culinary Arts course, where you will gain the foundational skills to become a proficient Raw Plant-Based Culinary artist. This self-paced course developed and taught by Raw Vegan Master Chef Cherie Soria is designed to empower both novice and seasoned cooks to cultivate a new culinary perspective and embark on a path to healthy living with newfound confidence.

The course covers a wide range of topics related to raw food preparation, including essential techniques for healthy meal preparation, sprouting, dehydrating, recipe development, flavor balancing, plating, and food styling. Culinary confidence is boosted by mastering knife skills and navigating kitchen equipment with ease. Students learn useful culinary terms, how to read and follow a recipe correctly, mise en place, U.S. and metric measurements, basic culinary math, gastronomy, and the art and science of taste.

Students develop skills in recipe adaptation, produce selection, and menu planning while gaining practical experience crafting a diverse range of raw food dishes such as fresh garden soups, sauces, salad dressings, entrees, wraps, rolls, pâtés, crackers, and desserts. The course also explores a variety of popular ethnic foods, including fresh vegan sushi, living lasagna, pasta, wraps, fermented foods and other gourmet delights.
