Recipe: Chia Pumpkin Pudding

Chia Pumpkin Pudding
2 Servings

8 tablespoons Chia seeds
1 1/2 cups Almond milk
1/2 cup Pumpkin juice or puree
1/4 cup maple syrup
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8  teaspoon ginger
A pinch of salt


Mix all ingredients every few minutes for about 10 minutes, so the chia seeds do not clump together. Chill in refrigerator overnight. Stir again before serving and top with coconut whipped cream and pomegranate.
