February is the month of LOVE, and along with the hearts, flowers, and chocolate that help us celebrate the season, we at Living Light would like to take a moment to reflect on the many faces of love that exist in the world. There is of course, motherly love, fatherly love, sister and brotherly love, romantic love, love of nature, love of the mother of us all - Gaia, our beloved PLANET EARTH, crazy love, mad love, happy love, the love of a child for a parent or grandparent and vice versa. There is love of LIFE in all of its myriad forms - love of learning, love that transcends understanding, love of God or Goddess or Universal Peace. They say that love makes the world go around, and indeed, on a fundamental level, it truly does. It is love that can move mountains, make a difference, create harmony on our planet, and soothe our souls. We are grateful this month for the loving family we have created here at Living Light - for our wonderful and dedicated staff, our extraordinary students, our beautiful local community here on the Mendocino coast of Northern California, and for the worldwide raw food community we are proud to be a part of. Thank you all from the bottom of our HEARTS for being out there.

Francisco Sanchez is Making a Difference at Living Light
For the month of January, Living Light was pleased to honor Francisco Sanchez as our Employee of the Month. Francisco was born in Guadalajara and came to the U.S. as a boy. He first joined the café team at Living Light March 25, 2009 and has since endeared himself to us.
Francisco has earned the love and respect of his fellow employees and managers who say he never complains and always wears a smile. His attitude is a great example of the enthusiasm, excellent teamwork, and professionalism we all strive for here at Living Light. He is thoughtful, intelligent, friendly, and well organized, and he always provides excellent service to both employees and customers.
Anyone can tell Francisco likes working at Living Light - his disposition tells it all! You know he enjoys his job and this positive attitude is appreciated by our staff, students, and the public whom he serves. Living Light employees tell us he is hard-working and conscientious about what's new in the café - always alerting people as to something new or different that they might like.

Aphrodisiac Foods, Chocolate-Dipped Strawberries, and Chewy Gooey Vanilla Pine Nut Caramels
Aphrodisiac Foods - Do They Really Work?

Aphrodisiacs have been used throughout the ages to stimulate libido and increase fertility. Special foods were thought to insure both male and female potency and were sought out as a remedy for fears around inadequate sexual performance. Whether they did, indeed, work magic or they simply supplied a placebo effect, these foods have been revered by ancient cultures. It's no wonder, considering the importance of procreation to insure the longevity of the family, society, and religion (not to mention the pleasure of sexual activity).
The ancients also understood the importance of good nutrition as a key factor in the journey of human existence - not only because undernourishment creates a loss of libido and reduces fertility rates, but also because of the importance of providing the most fertile ground for the growth of the spirit about to enter the world. Many cultures believed that the journey of the human spirit, from the intent of the parents during the sex act, to the nurturing of the female during pregnancy, through the safe birth and the care and feeding of the growing child would determine the value of that person's life and their importance to the community And aphrodisiacs were used as part of the ceremony.
Why Certain Foods?
Substances that represented seed or semen were considered to have sexual powers. Many other types of foods were considered stimulating because of their resemblance to male and female genitalia. There was not always agreement about which foods were aphrodisiacs, but here a few common ingredients, along with recipes for that special romantic occasion.
An age-old symbol of fertility: The aroma is thought to induce passion in a female.
Besides being a phallic-shaped fruit, the banana is rich in potassium and B vitamins, necessary for sex hormone production.
The Aztecs referred to cacao as "nourishment of the Gods". Chocolate contains chemicals thought to affect neurotransmitters in the brain, including theobromine, a substance related to caffeine. Even though we think of chocolate as seductive and sensuous, if one consumes enough to satisfy the emotions, it may also satisfy the sex urge - especially when eaten alone. So feed chocolate to your lover - but not too much!
● Pine Nuts
Used as far back as Medieval times to stimulate the libido, pine nuts are a good source of zinc, a key mineral necessary to maintain male potency.
Referred to in erotic literature for ages, these beautiful fruits resembling nipples (use your imagination), are perfect for hand feeding your lover.
The scent and flavor of vanilla is believed to increase sexual desire. According to ancient folklore, this fragrant pod of an orchid plant will provide pleasure and happiness.
Chocolate-Dipped StrawberriesBy Cherie Soria Makes about 48 dipped strawberries
3/4 cup cacao butter (melted)
1 vanilla bean scraped (use inner seeds, only)
3/8 cup evaporated cane juice (finely powdered in a coffee grinder)
1/8 teaspoon salt
1/2 cup cocoa powder
1/8 cup agave
48 medium-size strawberries with leaves, washed and towel dried
1. In a high speed blender blend the melted cacao butter, vanilla, evaporated cane juice, and salt until all ingredients are completely emulsified and the mixture is warm.
2. Pour the mixture into a food processor; add half the cacao powder and process until well combined.
3. Add the agave to the food processor and continue to blend. Then add the rest of the cacao powder and continue to blend, scraping down the sides of processor, as needed, until the mixture is smooth and the cacao is well integrated, about 2 more minutes.
4. Put the mixture into a bowl and dip fresh strawberries into the chocolate. Place the dipped fruit on a non-stick sheet and chill to firm before serving, about 30 minutes. (Do not freeze strawberries or they will become "mushy".) Will last 2 days, stored in a covered container in the refrigerator. Sumptuously sensual variations:Chocolate Covered Frozen Bananas
- Insert a long bamboo skewer into one end of a perfectly ripe, well formed banana and freeze for 24 hours. Holding onto the skewer, dip the bananas into the chocolate mixture, covering the bananas completely. If desired, roll in crushed almonds. Place the coated banana on a non-stick sheet and return to the freezer until serving time. (Do not allow the bananas to defrost or they will become "mushy".) Will last 2 weeks, stored in a covered container in the freezer. Hand-Rolled Chocolate Truffles -
Allow the chocolate mixture to chill for a couple of hours in the fridge, or until the mixture looses its stickiness. With gloved hands, roll the chocolate truffle mixture into balls, using 1 tablespoon of the mixture for each. Roll in cocoa powder to garnish. Refrigerate in a covered container until ready to serve.
Chewy Gooey Vanilla Pine Nut CaramelsBy Cherie Soria
Yields 2 cups (makes 32 pieces)
1 cup pitted dates, chopped
1 cup pine nuts, minced
1 teaspoon vanilla extract
1. Combine dates, pine nuts and vanilla in a food processor and process until smooth. Do not over process or the mixture will separate and become very oily.
2. To form the caramels into small squares, place the mixture between 2 sheets of parchment paper and, using a rolling pin, form a square about 1 inch thick. Chill for 2-3 hours, or until firm. Remove the top layer of parchment paper, and slice into 1-inch squares.
3. Store refrigerated in a sealed container for up to 1 month. Sweetly Sensual Variations:Caramel Sauce
- thin using a small amount of coconut water and blend to desired consistency.Chewy Caramel-Filled Chocolate Truffles
- Using gloved hands, form caramels balls using 1/2 tablespoon of the caramel mixture. Chill for 2-3 hours. Using a toothpick, dip chilled caramels into the chocolate mixture (see recipe, above), and place them on a non-stick surface. Chill for 1-2 hours.
