Living Light classes and programs are designed to fit a busy schedule. Although a certification training may take 3 weeks or more, classes have been bundled together to assist with scheduling and create savings on the most popular programs.

For the 2013 school year, we offer packages focusing on a specific personal or professional path. If you are excited about obtaining a gourmet raw culinary education, a raw food nutrition educator program, or a teaching career, we have the perfect solution. Once you select a package you may take the individual components separately, and return as many times as needed to complete your certification. 2012_Package_AssociateChef

The renowned and highly-coveted Raw Culinary Arts Associate Chef and Instructor Certification™ is designed for all levels of expertise, from novice to professional chef. This program consists of five classes beginning with a one-day intensive that includes demonstrations on a variety of techniques and the use of equipment necessary in a raw food kitchen.

In the first day of training, there are seventeen comprehensive culinary presentations ranging from sprouting and fermentation to preparing recipes from appetizers to desserts. Following this is a full day of hands-on, practical knife skills designed to provide confidence and gain expertise in raw food preparation. Next, students spend five action-packed days of hands-on experience using a variety of culinary skills including recipe development and flavor balancing.

Students then complete a two-day course in raw food nutrition to develop the foundation for the final two weeks of the Raw Culinary Arts Associate Chef and Instructor™ Certification focusing on all-around chef skills and culinary technique, recipe production and development, and finally, learning how to teach raw culinary arts to others.

This unsurpassed advanced instructor training series is specifically designed to prepare students to be able to share their expertise with people who are eager to improve their health and embrace a raw food approach to food preparation. This training starts with Raw Culinary Arts Associate Chef and Instructor Certification™ which is designed for all levels of expertise.

The Advanced Instructor Training™ course follows the associate chef and instructor training. This course has several sections, including: public speaking, business management, marketing skills, social networking, time management, organizational skills, website development and tips for providing personal coaching.

This enhanced culinary program focuses on raw vegan dessert production through a combination of theory, demonstration and practical hands-on training. Students learn the principles involved in the use of binders, thickeners, emulsifiers and gelling agents; how to choose the right sweeteners and fats for a variety of classic pastry recipes and discover the secrets of making exquisite raw desserts that taste even better than famous cooked desserts! Students create a variety of professional looking and sublime tasting gourmet raw desserts to tantalize the palate without compromising health!

The premier Gourmet Raw Food Chef Certification™ series takes students to the next level of confidence and expertise: exploring world cuisines, developing recipes, transforming traditional cooked dishes into health-promoting gourmet raw cuisine, organizing large events, and learning about the science of raw food nutrition. Go home empowered and confident in the ability to produce incredible new dishes without the need for recipes, and learn how to write recipes suitable for publishing. Once the Raw Culinary Arts Associate Chef and Instructor Certification™ series is completed, the following subsequent courses may be taken within two years.

And in the Fall expanded pastry session, Living Light pastry chef instructors provide you with supportive, expert guidance in helping you develop your own delicious dessert recipes.

The gourmet completion series takes students to the next level of confidence and expertise: exploring world cuisines, developing recipes, flavor balancing, catering, elegant entertaining, food costing and pastry arts. Go home empowered and confident in the ability to produce incredible new dishes without the need for recipes, and learn how to write recipes suitable for publishing.
