Every day, and in countries around the world, more and more people are turning to a plant-based diet for reasons of personal health, environmental concerns, and to cultivate a compassionate lifestyle. The ‘seeds’ of this plant-based movement started sprouting years ago with visionary leaders that include Brenda Davis, RD and Vesanto Melina MS, RD. They have been steadily educating professionals, governments and ‘heads of state’ on the numerous benefits of a plant-based diet, creating ripples of awareness and change. We’re fortunate to have these two dynamos on our faculty and offering their research-based curriculum for an Advanced Vegan and Raw Food Nutrition Educator Certification program at Living Light.
Brenda Davis has worked as a research dietitian, public health nutritionist, clinical nutrition specialist, nutrition consultant and academic nutrition instructor. She has recently consulted with Saudi Prince Alwaleed and his staff. She is the lead dietitian in the Diabetes Wellness Research Project, and has done community intervention work on this project in Majuro, Marshall Islands over the past decade. Brenda is co-author of ten plant-based nutrition classics with more than 750,000 copies in print, in 10 languages. In 2007, she was inducted into the Vegetarian Hall of Fame.
Vesanto Melina is the lead author of the Academy of Nutrition and Dietetics’ current Position Paper on Vegetarian Diets. She is co-author of award winning books that are classics on plant-based nutrition, most with Brenda Davis, and now in 11 languages. Brenda and Vesanto’s most recent book, Becoming Vegan: Comprehensive Edition, written for dietitians, MDs, other health professionals, and nutrition enthusiasts, has exhaustive research with 620 pages entirely referenced.
In the past three years, Vesanto and Brenda have given more than 40 presentations to the general public and health professionals from Granada, Spain to Reykjavik, Iceland and across North America in major metropolitan areas. They continue to skillfully debunk myths, and offer new insights to planning and preparing meals and menus that support optimal, vibrant health.
In the next month, they will offer their time-tested curriculum for raw vegan nutrition certification at Living Light. No other vegan and raw nutrition course can match the comprehensive curriculum and level of expertise these two women bring.
